Rev. Prince Baidoo is a Registered Dietitian and a Wellness Consultant. He heads the Dietherapy Unit of the Tema General Hospital and co manages the hospital’s Wellness Center. He holds an MPhil in Dietetics from the University of Ghana and a BSc. in Biochemistry from the Kwame Nkrumah University of Science and Technology, Kumasi.

Prince holds a Post Graduate certificate in Nutrition in Changing Global Environment from the Hebrew University of Jerusalem, Rehovot, Israel. He is an alumnus of the prestigious African Nutrition Leadership Programme (ANLP) organized by the Center of Excellence, North Western University, Potchefstroom, South Africa.

Prince has been working with the Ghana Health Service for the past 14 years. He runs regular nutrition outreach campaigns for schools, corporate organizations and social groups.

Prince is passionate about the nutritional health and wellness of individuals with diet related diseases as well the general public. His professional goal is to ensure that every food on the plate/bowl or drink in the glass/cup of his patients or audiences is healthy. He runs therapeutic cookery seminars for hospital catering departments, corporate organizations, families and individuals.

Rev. Prince Baidoo is a life coach, a youth counselor and a pastor of a Youth Church.

Biography of Anthony N. Kullah (ANK)-Ghana Academy of Nutrition and Dietetics

ANK, a dedicated health sector expert, has over a decade of experience in health and nutrition. His specialization in multisector nutrition programming and life course interventions, particularly his leadership in numerous implementation science projects in the Upper West Region, has left a significant impact. ANK’s commitment to education and knowledge sharing is evident in his role as a Part-time Assistant Lecturer at the University for Development Studies, where he teaches nutrition courses. He also serves as the Regional Nutrition Officer for the Upper West Region, where he plans and implements evidence-based maternal, infant, child, and adolescent nutrition interventions. Anthony is a registered nutritionist with the Allied Health Professions Council, Ghana, and an American Society for Nutrition and The Nutrition Society member. Academically, ANK holds an MPhil in Human Nutrition and Dietetics from KNUST and a BSc in Community Nutrition from the University for Development Studies, Ghana. His research interests focus on non communicable diseases and undernutrition, and his expertise spans strategic collaboration, project management, and stakeholder engagement. Recognized for his analytical thinking, communication skills, mentoring abilities, and results-driven approach, ANK has contributed to developing national nutrition guidelines and protocols while demonstrating exceptional adaptability and technical leadership in advancing nutrition and health outcomes.

Joseph B. Danquah (RD) is a clinical dietitian and the General Secretary of the Ghana Academy of Nutrition and Dietetics (GAND). His role as a leader in child malnutrition initiatives is a testament to his expertise and dedication. As the Head of the Department of Nutrition & Dietetics at the South Tongu District Hospital, Sogakope, he has been instrumental in leading innovative projects to eradicate child malnutrition in Ghana. His leadership on the ‘Mother MUAC’ initiative has empowered mothers to detect early signs of malnutrition, saving the lives of many children.

Joseph’s entrepreneurial spirit is evident in his role as the founder of Healthmates Nutrition, where he combines clinical expertise and advocacy to deliver impactful nutrition solutions. His work focuses on supporting individuals and communities in preventing and managing non-communicable diseases through practical, culturally relevant dietary interventions.

Joseph is a student in the Master of Business Creation (MBC) program at the David Eccles School of Business, University of Utah. His commitment to health equity and sustainable nutrition is unwavering. He is strengthening his entrepreneurial skills to scale his nonprofit ventures and continue championing these values across Ghana.

Felicia Kuuyong Adjei Danso (Mrs.) is a public health nutritionist and advocate with over 15 years of experience improving the health of women, children, and adolescents in underserved areas. She holds a BSc in Community Nutrition from the University for Development Studies, Tamale, Ghana, and an MSc in Global Public Health and Policy from Queen Mary University of London. Currently pursuing her PhD in Public Health at Kwame Nkrumah University of Science and Technology, Felicia’s academic qualifications underscore her expertise in public health.

Felicia specializes in maternal, infant, and young child nutrition and has led nutrition programming and implementation across Ghana’s healthcare system. She actively engages in voluntary outreach and has a strong track record of collaboration with renowned organizations like UNICEF, USAID, the World Food Programme, and other CSOs. These partnerships are a testament to her commitment to promoting holistic health and well-being and her ability to work with diverse stakeholders.

Felicia’s work extends beyond nutrition to advocacy for non-communicable diseases (NCDs). She raises awareness and funds for initiatives like lactating working mother support programs. Her leadership as a former GAND zonal representative (2023-2024) and her current role as GAND treasurer are testament to her dedication to advancing public health. These roles underscore her ability to lead and inspire others in the field.

With strong leadership, communication, and problem-solving skills, Felicia is well-positioned for impactful nutrition research, consultancy, and advocacy roles.

Pearl Exornam Selormey is a seasoned Clinical and Public Health Nutrition and Dietetics practitioner with over 13 years of experience in the healthcare industry. She holds a Master’s in Human Nutrition and Dietetics from KNUST and certifications in Food and Nutrition Security from Wageningen University. Pearl has worked as a Nutrition Consultant with renowned organizations such as Wageningen University, GIZ, and the Ghana Food Movement, and has supported training initiatives with UNICEF.

A strong advocate for childhood malnutrition prevention and wellness throughout the life cycle .Pearl plays an active role in raising awareness across Ghana through media campaigns and community outreach. She currently leads the Nutrition and Dietetics Department at St. Elizabeth Hospital and holds key positions, including Project Coordinator and Public Relations Officer for the Ghana Academy of Nutrition and Dietetics (GAND). Additionally, she is Chairperson for the Association of Nutrition and Dietetics Professionals in Ahafo and Vice President of the St. Elizabeth Hospital Welfare Fund. Pearl is dedicated to enhancing patient care by facilitating nutrition training programs and volunteering for various initiatives. She also serves on GAND committee projects including HD4L , SSBS and FOPLA.

Prof. Paul Aryee is a Physiologist and an Associate Professor of Public Health Nutrition at the Nutritional Sciences Department of the School of Allied Health Sciences, University for Development Studies (UDS), Tamale. He is well groomed in the Nutritional Sciences, Public Health and Human Physiology. Aside his passion for training and mentoring under-graduate and post-graduate students of biomedical and allied health sciences, he is also an astute researcher and advocate for public health issues. He is actively involved in nutrition and public health related research and policies, and currently has interests in studying the aetiological factors of nutrition related non-communicable diseases (NCDs), especially, those of public health importance. As a student of DOHaD (developmental origins of health and disease), he has spent the last 2 decades working towards unravelling the factors that may be moderating the development of NCDs during the phases of plasticity, i.e. during the first 1000 days of life. Prof. Aryee’s involvement in collaborative projects over the years with Governmental and NGOs in the area of maternal (pregnant/lactating women) and child nutrition and health, has been the bases for his current thrust in academia.

Prof. Aryee has over 60 peer reviewed publications (including 2 books), and a number of other published submissions (abstracts, reports, contributions to brochures, newspapers, etc) to his name. He is always happy to work with everyone to keep the flames of nutrition burning.

Dr Frank Ekow Atta Hayford is a Senior lecturer, Researcher, and Dietician with the Department of Dietetics, University of Ghana. He has been involved in Nutrition and Dietetics Education and Practice since 2012, with a strong interest in Clinical / Public Health Nutrition, Nutritional Epidemiology and Immunology, and Nutrition in Sports and Stress. He holds a PhD in Dietetics from the Centre of Excellence for Nutrition, Northwest University in South Africa. Frank is an HCPC and DHA-certified Dietitian. He is currently the graduate program coordinator for Dietetics and a member of the College of Health Sciences Academic board at the University of Ghana. He has authored several peer-reviewed publications, published abstracts, and presented at conferences in the above-stated areas of interest. He is training BSc, MSc, PhD, and Pre-med students at the College of Health Sciences, University of Ghana. He is a visiting scholar/ researcher at The University of Sheffield (UK), Leeds University (UK), Queen University (Canada), Northwest University (South Africa), and the University of Cape Town (South Africa). 

He is a Queen Elizabeth Scholar (QES) and an African Research Initiative for Scientific Excellence (ARISE) fellow. He is a founding member of the Ghana Academy of Nutrition and Dietetics (GAND), a member of the International Society for the Study of Lipids and fatty acids (ISSFAL), the American Society for Nutrition, and the African Nutrition Society. He is an alumnus of the Africa Nutrition Leadership Program (ANLP), 2015 group. He has contributed to local and global nutrition activities by working with the African Nutrition Society and other societies. His current research focuses on nutrition and immunology, exploring host-directed therapeutics agents such as N-3 LCPUFA as an adjunct treatment in infectious diseases like TB and other contagious morbidities.

Dr. Collins Afriyie Appiah, a highly qualified professional, is the Chair of the Practice Standards and Accreditation Committee (PSAC) of the Ghana Academy of Nutrition and Dietetics (GAND) and a member of the Governing Board (GB) of GAND. He holds a [specific degree] from [specific institution] and a [specific degree] from [specific institution]. As the Chair of PSAC, he liaises with the GB, the Chairs of the Nutrition and Dietetics groups, and members of the professional body to ensure strict adherence to ethically sound professional standards in the discharge of their nutrition and dietetics practice/services to the public. Dr. Appiah also advises the GB on relevant professional courses to recommend for members to undertake to meet licensing and accreditation requirements. He is a founding member of the Academy, founded in July 2019. Dr. Appiah played an active role as a member of the national executive committee of the erstwhile Ghana Dietetic Association and worked with the erstwhile Ghana Nutrition Association during the merger of the two associations into GAND. He was a member of the Interim Governing Board of GAND from 2019 to 2021. Dr. Appiah has been a registered dietitian and licensed practitioner by the Allied Health Professions Council, Ghana, since 2012. He is currently a lecturer in the undergraduate and postgraduate Human Nutrition and Dietetics program in the Department of Biochemistry and Biotechnology, Kwame Nkrumah University of Science and Technology, Ghana.

As a Lecturer of Dietetics and Nutrition at the University of Health and Allied Sciences, Daniel Mensah, RD, has made significant contributions to the training of over 100 young dietitians. These individuals are now actively contributing to the healthcare delivery system in the country and beyond, a testament to Daniel’s dedication and expertise. His professional practice is focused on Paediatric Nutrition, where he is a leading expert in Ghana, and he shares this knowledge in various health facilities, including the Ho Teaching Hospital.

He has provided consultancy services for several organizations and programs, such as the USAID Integrated Health Program (IHP) co-creation, the Ghana Meatless Monday Initiative, and HD4HL.

Daniel Mensah’s dedication to advancing the field of nutrition is evident in his areas of research interest, which include clinical nutrition and the nutritional microbiome. His numerous publications are a testament to his commitment to furthering our understanding of these complex areas.

Daniel Mensah has been a key figure in the country’s Dietetic and Nutrition governance, holding several leadership positions. His roles have included President, General Secretary, and Chair of the Academy’s Foundation. He is widely recognized as a pioneer in the establishment of the Allied Health Professions Council.

Daniel Mensah’s passion lies in the advancement of the nutrition profession. He is dedicated to seeing the Ghana Association of Nutrition and Dietetics (GAND) play a significant role in the nutrition and health transformation summit in Ghana and Africa.

Julius Evame Agbagba is a dedicated Dietitian at the University of Ghana Medical Centre and a passionate advocate for advancing nutrition and dietetics in Ghana. As part of the pioneering cohort of the Dietetics program at the University of Health and Allied Sciences, he played a pivotal role in shaping the student association, serving as the founding president of the Ghana Dietetic Students Association at UHAS.

Currently a Master of Public Health candidate at the School of Public Health, University of Ghana, Julius also serves as the contact person for students and interns in the Dietetics and Nutrition department, mentoring the next generation of dietetic professionals.

As the Student Representative for the Ghana Academy of Nutrition and Dietetics (GAND), Julius is deeply committed to fostering collaboration among students, interns, and professionals. He actively works to create a supportive environment that inspires innovation and professional growth in dietetics, demonstrating his networking skills and dedication to the field.

Julius’s professional interests include clinical nutrition, public health advocacy, and evidence-based dietary practices. Married to a fellow dietitian, his life reflects his love and loyalty to the profession. In the future, he aims to further contributing to the field of dietetics.
Outside of work, he enjoys reading, meeting new people, traveling, and making his wife happy—a testament to his dedication to family and career.

ALBERTA SEYRAM ADJOA ANANGA AYITEY, a Registered Dietitian and Home Economics teacher with a wealth of twenty-five years of experience, is a testament to the power of education. Her academic journey includes an MSc in Human Nutrition and Dietetics from Kwame Nkrumah University of Science and Technology, Kumasi, and a BSc in Psychology with Information Studies from the University of Ghana Accra. She is a professional teacher with two decades of teaching experience and a certificate from the Wageningen Center for Development and Innovation, ‘Making Agriculture Work for Food and Nutrition Security. ‘Alberta is the founder, CEO, and Programme Coordinator for ANEG Foundation and Programme Coordinator for Akosua Danquah Foundation. Her MSc. paper on ‘ Accessing Physical Activity Level and Nutrient Intake and Obesity in Middle-aged Adults in Akuse’ is a testament to her research prowess. She has organized numerous programs and events for Seyfoods and Events and is a key member of the Local organizing committee of the African Nutrition Epidemiology Conference(ANEC 9)for the African Nutrition Society (ANS), and is currently assisting in the organization of the Conference of Nutrition and Dietetics (COND). She is the Zonal Representative on the GAND Governing Board and a proud member of the Ghana Academy of Nutrition and Dietetics, the America Nutrition Society (ANS), and a Rotarian. Alberta’s personal life is equally inspiring, as she is a loving wife and a mother of six.
